Zucchini and Corn Fritters

These zucchini and corn fritters make the perfect lunch alternative to sandwiches, or even a light dinner when served with a side salad. They taste great, and kids are always love them.

Fritters are one of those foods you can add anything you have on hand into, so feel free to mix up the recipe. Any vegetables that can be grated always work well.

What you will need

To make these delicious fritters you will need:

  • Self raising flour
  • Milk
  • Eggs
  • Grated zucchini
  • Canned corn kernels – or frozen if it’s what you have on hand
  • Grated tasty cheese – Or your favourite cheese
  • Salt and pepper
  • Olive oil – for frying

Zucchini and Corn Fritters

Yield: 12 fritters
Prep Time: 10 minutes
Cook Time: 20 minutes
Total Time: 30 minutes

These zucchini fritters make the perfect lunch, or light dinner when served with a side salad.

Ingredients

  • 1 1/2 cups self raising flour
  • 1 cup milk
  • 1 egg
  • 1 medium zucchini, grated
  • 1/2 cup grated tasty cheese
  • 125g can corn kernels, drained
  • Salt and pepper, to taste
  • 2 tablespoons olive oil

Instructions

  1. In a large mixing bowl combine the flour, milk, egg, grated zucchini, grated cheese and corn kernals. Season with salt and pepper.
  2. Heat the olive oil large frying pan over a medium-high heat. Spoon the batter into the pan and cook for around 3 minutes each side, or until golden and cooked through.
  3. Repeat with the remaining batter, adding more olive oil as necessary.

Notes

Store these fritters in an airtight container in the fridge for up to 3 days.

These fritters are suitable for freezing.
