These zucchini fritters make the perfect lunch, or light dinner when served with a side salad.
Ingredients
- 1 1/2 cups self raising flour
- 1 cup milk
- 1 egg
- 1 medium zucchini, grated
- 1/2 cup grated tasty cheese
- 125g can corn kernels, drained
- Salt and pepper, to taste
- 2 tablespoons olive oil
Instructions
- In a large mixing bowl combine the flour, milk, egg, grated zucchini, grated cheese and corn kernals. Season with salt and pepper.
- Heat the olive oil large frying pan over a medium-high heat. Spoon the batter into the pan and cook for around 3 minutes each side, or until golden and cooked through.
- Repeat with the remaining batter, adding more olive oil as necessary.
Notes
Store these fritters in an airtight container in the fridge for up to 3 days.
These fritters are suitable for freezing.
