 Surprise Inside Cupcakes

These surprise inside cupcakes are so much fun, kids love them!  They always get a great reaction when bitten into by unsuspecting people.  They are surprisingly easy to make; it’s as simple as adding in one extra step between baking and icing the cupcakes.  We have filled our cupcakes with mini m&ms, but you could use any small candy, such as mini marshmallows or mini jelly beans.

  • 125g butter, softened
  • 3/4 cup sugar
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 1 1/2 cups self raising flour
  • 3/4 cup milk
  • mini m&ms


Preheat the oven to 180c. Line 2 x 6 hole muffin trays with cupcake liners.
In the bowl of a stand mixer, beat the softened butter, sugar and vanilla extract until light and creamy. Add the eggs one at a time, beating until combined.
Add the flour and the milk and beat once again until the mixture is well combined.
Spoon the mixture into the 12 cupcake liners. Bake for 20 minutes, or until cupcakes spring back when lightly touched. Allow to cool completely.
Once the cupcakes have cooled, gently make a small hole in the middle of each cupcake by scooping out part of the cupcake with a teaspoon. Fill each hole with the mini m&ms.
Top each cupcake with your chosen icing.

We topped our cupcakes with a simple buttercream, but you could use any icing that you prefer.  To make our buttercream:

  • 125g butter, softened
  • 1 1/2 cups icing sugar
  • 1 tablespoon milk
  • 1 teaspoon vanilla extract, optional
  • food colouring, optional


Using a stand mixer, beat the softened butter until it is pale and creamy.  Slowly add the icing sugar and milk.  Also add the vanilla extract and food colouring at this stage if using.  Pipe or spread the icing onto your cupcakes.
