Rockmelon and Raspberry Slice

Rockmelon and Raspberry Slice

If you are looking for a different way to use rockmelon, this Rockmelon and Raspberry Slice is it!  It has a cake style base, topped with slices of roasted rockmelon and raspberries.  I used frozen raspberries as they are far cheaper than fresh (only $9 per kg from Coles), but you can use fresh if you prefer.  This slice also works well with blueberries in place of, or in addition to, the raspberries.  I dusted the slice with a little icing sugar to serve.
