Roasted Parmesan Sweet Potato
I’m obsessed with sweet potatoes, so this Roasted Parmesan Sweet Potato side dish is one of my absolute favourites. I like to stock up on sweet potatoes when they are cheap (they are often $2kg when in season around here) and this recipe is the perfect way to use them. Just coat the sweet potatoes, bake for around 25 minutes and they are ready to serve with any main course.
To make these delicious roasted sweet potatoes, first peel and cube the sweet potato. Then, add to a large mixing bowl along with some melted butter, olive oil, minced garlic, finely grated parmesan cheese, dried basil, dried oregano and dried parsley. Give it a good stir until all ingredients are well combined. Next, spread the sweet potatoes over a baking tray lined with foil and bake for around 25 minutes or until the potatoes are golden and cooked through. Just poke a fork through the sweet potato pieces to test if they are done, they should feel nice and soft. Serve while still warm.
- 500g sweet potatoes, peeled and cubed
- 2 tablespoons melted butter
- 2 teaspoons minces garlic
- 1 tablespoon olive oil
- 4 tablespoons finely grated parmesan cheese
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1 teaspoon dried parsley
- Salt and pepper
Preheat the oven to 190c. Line a baking tray with foil and set aside.
Add all ingredients in a large mixing bowl and stir until well combined. Spread evenly over the prepared baking tray.
Bake for around 25 minutes, or until sweet potatoes are golden and cooked through.
