Some recipes are just perfect for getting the kids to help out with, and this is one of them. This cookie dough has the same consistency as playdough, so it’s great to let the kids play with before shaping it into cookies. With so many jelly flavours available, you can take your pick and flavour the cookies however you like; we used Creaming soda, Blue Heaven, Lime and Lemon.
- 340 grams Butter Softened
- 1 cup Sugar
- 1 Egg
- 1 teaspoon Vanilla Extract
- 1 teaspoon Baking Powder
- 3 1/2 cups Plain Flour
- 4 85g packets Jelly
Cream the butter and sugar in a mixer until light and fluffy. Add the egg and vanilla extract and beat until well combined. Mix in the baking powder and flour.
Divide the mixture into 4, one for each jelly flavour, and mix in 2 tablespoons of jelly crystals to each. If you want a more vibrant colour you can add a few drops of food colouring to the dough (we did).
Roll tablespoons of the dough into balls and roll each ball in the remaining jelly crystals. Place the dough balls onto a lined baking tray and flatten slightly.
Bake the cookies at 180c for 12-15 minutes. Leave cookies to cool on the tray.
