I often come up with new recipes when I find leftover, open packets of food in the back of my cupboards, which is exactly how these Pretzel Crusted Brownies were created. They are the perfect combinations of sweet and salty, as well as soft and crunchy. If you don’t have pretzels on hand for the base, try substituting them with and equivalent amount of crushed biscuits, or even rolled oats.
- 1 cup pretzels, crushed
- 1/2 cup plain flour
- 1/2 cup brown sugar
- 1/4 teaspoon bi carb soda
- 115g butter, melted
- 125g butter
- 200g dark chocolate
- 2 eggs
- 1 teaspoon vanilla extract
- 1 cup plain flour
- 1 cup sugar
- 1 teaspoon baking powder
Combine the crushed pretzels, flour, brown sugar, bi carb soda and melted butter in a bowl and stir until well combined.
Press the mixture into the base of a lined slice tin and bake at 180c for 10 minutes.
Meanwhile, place the 125g of butter and dark chocolate into a medium saucepan, and stir over a low heat until melted. Add the eggs and vanilla extract and stir until well combined.
Add the flour, sugar and baking powder to the chocolate mixture and mix well.
Pour the brownie batter over the pretzel base, and bake at 180c for 20-25 minutes. Don't overcook, as you want the brownie to still be soft in the middle.
