Peanut Butter Brownie Swirl Cookies

 

It’s no secret that peanut butter and chocolate go so well together, but it’s something I have only recently discovered for myself.  That’s how these Peanut Butter Brownie Swirl Cookies came about!  They are made using two separate cookie doughs; the first is a peanut butter filled dough, and the second is a dark chocolate brownie cookie dough, containing dark chocolate to give it that real brownie taste.  Both the peanut butter and brownie dough are filled with chocolate chips, so there definitely is no shortage of chocolate in this recipe making it perfect for the chocolate lovers!

 

Once both doughs have been made, they are wrapped in cling film and placed in the fridge for an hour or two.  This lets the dough firm up, resulting in a dough that is much easier to work with.  To assemble the cookies, take around a teaspoon of each dough, and roll it into a ball.  Press the two balls together, roll lightly into a bigger ball and flatten slightly.  They are then baked for around 12 minutes, but watch them carefully to make sure they don’t start to colour too much.  Once the cookies have finished baking, they will feel quite soft and underdone straight out of the oven.  That’s ok, that’s exactly how we want them to feel.  As the cookies cool down, they will firm up a little, leaving the cookies cooked through, but still lovely and soft.

 

If you love your peanut butter and dark chocolate as much as I do, these cookies are a must try.  Don’t expect them to last long though, it’s extremely hard to stop at just one.

Ingredients

  • BROWNIE DOUGH
  • 100g butter
  • 100g dark chocolate
  • 1 teaspoon vanilla extract
  • 1 egg
  • 1/2 cup brown sugar
  • 2 tablespoons cocoa powder
  • 1 1/2 cups plain flour
  • 1/2 cup dark chocolate chips
  • PEANUT BUTTER DOUGH
  • 100g butter
  • 1/2 cup brown sugar
  • 1/2 cup white sugar
  • 1 teaspoon vanilla extract
  • 1 egg
  • 3/4 cup peanut butter
  • 1 1/2 cups plain flour
  • 1/2 cup dark chocolate chips

Instructions

To prepare the brownie dough, melt the 100g of chocolate and butter together in a large bowl. Add the vanilla extract, egg, brown sugar and cocoa powder, and mix until well combined. Add the plain flour and combine well. Fold through the chocolate chips. Wrap the dough in cling film and place in the fridge.
To prepare the peanut butter dough, beat the butter, brown sugar and white sugar together until light and creamy. Add the vanilla, egg and peanut butter and beat well. Add the flour and mix until a dough forms. Fold through the chocolate chips. Wrap dough in cling film and place in fridge with the brownie dough, for around 1 - 2 hours.
Line a baking tray with baking paper and preheat the oven to 180c.
To make the cookie, separately roll a teaspoon of each dough into a ball. Press the two balls of dough together, and lightly roll to make 1 ball. Place on the baking tray and flatten slightly.
Bake for around 12 minutes, watching that the biscuits don't begin to brown. Allow to cool on tray before serving.
