Ingredients and substitutions

  • Melted butter – Salted butter was used in this recipe, however unsalted butter can also be used.
  • Self raising flour – If you don’t have any self raising flour on hand, make your own by combining 1 cup of plain flour with 1 1/2 teaspoons of baking powder.
  • Desiccated coconut – It’s best to use desiccated coconut rather than shredded coconut in this recipe.
  • White sugar – The white sugar could be substituted with caster sugar.
  • Sweetened condensed milk – For best results, use a full fat tin of sweetened condensed milk.
  • Lemon juice – This recipe tastes best made with freshly squeezed lemon juice, however bottled lemon juice can be used if fresh isn’t available.
  • Passionfruit pulp – Use fresh or tinned passionfruit pulp.

Storage

Store this slice in an airtight container in the fridge for up to 4 days. This slice is not suitable for freezing.

This classic passionfruit slice is the perfect mix of sweet and tangy.

Ingredients

  • 100g melted butter
  • 1 cup self raising flour
  • 1 cup desiccated coconut
  • 1/2 cup white sugar
  • 395g sweetened condensed milk
  • 1/4 cup lemon juice
  • 170g can passionfruit pulp

Instructions

  1. Preheat the oven to 180c. Line a slice tin with baking paper and set aside.
  2. In a large mixing bowl combine the melted butter, self raising flour, desiccated coconut and sugar until a dough forms.
  3. Transfer the dough into the prepared slice tin and press down firmly with the back of a spoon. Bake for 10 minutes or until just starting to turn golden.
  4. To a mixing bowl add the sweetened condensed milk, lemon juice and passionfruit pulp. Whisk with a fork until well combined.
  5. Reduce the oven to 160c. Pour the sweetened condensed milk mixture over the base and bake for a further 15 minutes, or until the condensed milk layer has set.
  6. Allow the slice to cool completely in the tin before slicing.

Notes

  • Store the slice in an airtight container in the fridge for up to 4 days.
  • This slice is not suitable for freezing.
