One Pot Lasagne

This is the easiest 30 minute lasagne you will ever make.  Lasagne usually involves multiple pots, layering and baking, but not this version.  It’s made in the one pot or pan, and takes no time at all to put together.  Best of all, it tastes so good that even the fussiest members of your family will love it.  Like other meals made with mince, you can easily pack this one pot lasagne full with grated vegetables, whether it be sweet potato or zucchini, or even finely chopped spinach.

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 carrots, peeled and diced
  • 2 celery sticks, diced
  • 1 teaspoon minced garlic
  • 500g beef mince
  • 3 tablespoons tomato paste
  • 700g jar passata
  • 2 teaspoons dried basil
  • salt and pepper
  • 8 fresh lasagne sheets
  • 375g ricotta cheese
  • 2 tablespoons milk
  • 1/2 cup grated parmesan cheese
  • 1/2 cup grated tasty cheese


Heat the olive oil in a large pot or frying pan with high sides over medium heat. Add the onion, carrot, celery and garlic and cook, stirring, until the vegetables have softened.
Add the mince and cook, stirring, until the mince has browned. Add the tomato paste, passata and basil along with 2 cups of water and stir through. Season with salt and pepper and reduce the heat.
Cut the lasagne sheets into strips approximately 3cm wide and add to the pot separately, so that they don't stick together. Stir through the sauce and cook for around 15 minutes, or until the pasta is cooked through.
In a small bowl, combine the ricotta cheese, milk and parmesan cheese. Put tablespoons full of the cheese mixture into the pot, sprinkle over the grated tasty cheese and cook for a few more minutes, until the cheese has melted.
