Mint Slice Brownies

If you like anything mint flavoured, you are going to love these Mint Slice Brownies.  They are basically dark chocolate brownies, stuffed with Mint Slice biscuits (a favourite of mine).  The brownies recipe is the same as the one we used to make our Tim Tam brownies, but I think I actually prefer this version, although they are both amazing.

These brownies are completely versatile and you can substitute the Mint Slice (which are an Australian biscuit) for any type of biscuit you happen have an hand.  Just pour a little of the brownies batter over the base of the slice tin, arrange the biscuits in a single layer in the tin, and the top with the remaining brownie batter.  You can bake the brownies for a little shorter or longer than the time stated in the recipe, which is just a suggested time.  It depends how you like your brownies, dense or slightly squidgy in the middle.

Ingredients

  • 200g dark chocolate
  • 180g butter
  • 1 cup brown sugar
  • 3 eggs
  • 3/4 cup plain flour
  • 1 x packet Mint Slice biscuits

Instructions

Preheat the oven to 160c and line a slice tin with baking paper.
Place the chocolate and butter in a microwave safe bowl and melt in the microwave.
In another bowl, whisk the brown sugar and eggs until well combined.
Stir the chocolate through the egg mixture, then add the flour and and stir until well combined.
Pour 2/3 of the brownie mixture into the slice tin, them place the Mint Slice biscuits in the tin. You may not need the entire pack, but just use however many fit in your slice tin. Pour the remaining brownie mixture over the top of the biscuits.
Bake in the oven for around 35 minutes. The brownie will still feel very soft when it comes out of the oven, but will harden up as it cools. Allow the brownie to cool completely before slicing.
