These Mini Pancake Bites are the perfect snack, and are great for school lunchboxes. They have a muffin type texture, but taste just like pancakes. I created them using my favourite pancake recipe, so feel free to give this recipe a go in pancake form if you love fluffy, American style pancakes. You can bake them plain, or add topping just before putting them in the oven, which is what I have done here. I used frozen blueberries, frozen raspberries, dark chocolate chips and caramel chocolate chips. You could also add some maple syrup at the mixing stage for maple syrup flavoured pancake bites.
After costing out this recipe, using the prices for Woolworths online in SA, the cost minus the extras on top is $1.68, so only $0.14 per pancake bite. If you are feeling lazy, a pancake shaker bottle works just as well.
- 260g self raising flour
- 1 teaspoon sugar
- 30g butter, melted
- 2 eggs
- 300ml milk
- 1 teaspoon vanilla extract
Preheat oven to 180c. Put all ingredients in a stand mixer and beat until well combined.
Pour the pancake mixture into a 12 hole, or 2 x 6 hole, muffin tin. Top with any extras if you are using them. Bake for 12-15 minutes, or until the pancake bites have cooked through.
Let the pancake bites cool slightly before removing from muffin tin. Eat while still warm or at room temperature.
