Mini M&M Cookies
These Mini M&M Cookies combine my all time favourite cookie recipe with Mini M&Ms, resulting in a fun, chocolatey chewy cookie. This recipe is the same cookie recipe base I used to create my Chocolate Chip Skillet Cookie recipe, and it bakes amazingly no matter what size cookies you are baking. You can really add anything to these cookies, whether it’s chocolate chips, nuts or desiccated coconut, but I chose to use Mini M&Ms which are my absolute favourite type of M&M.
- 150g butter, softened
- 1/2 cup white sugar
- 1/2 cup brown sugar
- 1 teaspoon vanilla extract
- 1 egg
- 1 3/4 cups plain flour
- 1/2 Mini M&Ms
- extra Mini M&Ms for decorating, optional
Preheat the oven to 160c. Line 2 baking trays with baking paper.
Add the softened butter, both the white and brown sugar and the vanilla extract to the bowl of a stand mixer and beat well until light and creamy.
Add the egg to the stand mixer and mix again until combined. Add the flour and mix slowly until combined. Gently stir through the Mini M&Ms.
Roll tablespoons of the dough into balls, place on the baking trays and press down gently. If using the extra M&Ms, press these gently onto the top of the cookies.
Bake the cookies for 12-15 minutes, depending on how soft you like your cookies. The cookies will harden slightly as they cool.
