Mango Salad

This mango salad is the ultimate summer salad. The fresh juicy mango turns a simple salad into something so delicious, and the riper the mango the better when it comes to this salad.

Ingredients

  • 120g salad leaves
  • 1 avocado, diced
  • 1 mango, diced
  • 1/4 cup slivered almonds
  • Handful mint leaves

Honey Mustard Dressing

  • 2 tablespoons olive oil
  • 1 tablespoon white wine vinegar
  • 1 teaspoon honey
  • 1 teaspoon Dijon mustard
  • salt and pepper, to taste

Instructions

  1. Assemble the salad by layering the salad ingredients on a large serving plate or in a salad bowl. Start with the lettuce leaves, followed by the diced avocado, diced mango, slivered almonds and finally the mint leaves.
  2. To make the honey mustard dressing, add the olive oil, white wine vinegar, honey and Dijon mustard to a screw top jar. Ensure the lid is on tight, before shaking until well combined. Season to taste with salt and pepper.
  3. Drizzle the salad dressing over the salad and serve immediately.
