This mango salad is the ultimate summer salad. The fresh juicy mango turns a simple salad into something so delicious, and the riper the mango the better when it comes to this salad.
Ingredients
- 120g salad leaves
- 1 avocado, diced
- 1 mango, diced
- 1/4 cup slivered almonds
- Handful mint leaves
Honey Mustard Dressing
- 2 tablespoons olive oil
- 1 tablespoon white wine vinegar
- 1 teaspoon honey
- 1 teaspoon Dijon mustard
- salt and pepper, to taste
Instructions
- Assemble the salad by layering the salad ingredients on a large serving plate or in a salad bowl. Start with the lettuce leaves, followed by the diced avocado, diced mango, slivered almonds and finally the mint leaves.
- To make the honey mustard dressing, add the olive oil, white wine vinegar, honey and Dijon mustard to a screw top jar. Ensure the lid is on tight, before shaking until well combined. Season to taste with salt and pepper.
- Drizzle the salad dressing over the salad and serve immediately.
