Healthy Baked Broccoli Nuggets
Is it just me or do all kids never stop eating during the school holidays? It seems like they are in the kitchen every few minutes searching for something else to snack on. These Healthy Baked Broccoli Nuggets are perfect for those school holiday (or anytime really) food cravings. Kids love them, probably because they don’t realise they are jam packed full of broccoli, but I think adults love them just as much! They are great served as they are straight out of the oven, but are also amazing served with your favourite sauce for dipping, tomato sauce is usually the request from kids.
Not only do these broccoli nuggets make an excellent snack, but they are also super easy to make. Start by lining a baking tray with baking paper and set aside. Preheat your oven to 180c. Place your broccoli in a saucepan filled with boiling water for 1 minute, then transfer straight to a bowl filled with cold water, which quickly stops the cooking process. In another bowl, add a finely chopped onion, an egg, breadcrumbs, grated cheese, dried or fresh parsley and a little salt and pepper. Finely chop your blanched broccoli and add to the other ingredients, mixing until well combined (feel free to use your hands for this step if you prefer).
Now it’s time to shape your nuggets. Using a tablespoon of mixture at a time, press it firmly into a ball using your hands, and then shape into a nugget or any other shape your prefer. Place on the prepared baking tray and continue with the rest of your mixture. It’s often easier to shape the mixture when you wet your hands after every few nuggets. Once all the mixture is shaped, place your baking tray into the preheated oven. Bake for around 20 minutes, or until the nuggets are golden, turning half way through the cooking time. Enjoy while hot.
- 300g frozen broccoli
- 1 onion, finely chopped
- 1 egg
- 2/3 cup breadcrumbs
- 1/3 cup grated cheese
- 1 teaspoon dried parsley
- salt and pepper
Preheat oven to 180c. Line a baking tray and set aside.
Place the broccoli into a saucepan filled with boiling water for 1 minute, then transfer straight to a bowl of cold water. Drain and chop finely.
In a large mixing bowl, add the chopped broccoli, onion, egg, breadcrumbs, grated cheese, parsley and salt and pepper. Mix until well combined.
To shape the nuggets, take tablespoons full of mixture and press firmly into a ball, then shape and place onto the prepared baking tray. Repeat with the rest of the mixture.
Bake for around 20 minutes or until golden, turning halfway through. Enjoy while hot.
