Ham and Vegetable Noodle Cups
If you have a couple of packets of 2 minute noodles in the cupboard you have a meal, these tasty Ham and Vegetable Noodle Cups. Add some ham, grated vegetables, eggs and sour cream and you can turn basic noodles into something delicious. You can use any grated vegetables you like in this recipe, depending on what you have on hand (I used grates sweet potato and carrot).
Start by cooking the noodles according to the packet directions, but don’t add the flavour sachets, keep those aside for later. Once the noodles are cooked, add them to a large mixing bowl along with the flavour sachets, grates vegetables, eggs, sour cream and chopped ham. Stir until the mixture is well combined, then divide between 2 greased 6 hole muffin tins. Top with some grated cheese, then bake until the noodle cups have set.
- 2 x 85g packets chicken two minute noodles
- 3 cups grated vegetables
- 2 eggs
- 1/2 cup sour cream
- 1/2 cup ham, chopped
- 1/2 cheese, grated
Preheat oven to 180c. Lightly grease 2 x 6 hole muffin trays.
Cook the noodles according to the packets instructions, but don't add the flavours sachets, keep those aside for the next step.
In a large mixing bowl, add the noodles, the flavour sachets, grated vegetables, eggs, sour cream and chopped ham.
Divide the mixture equally between the muffin trays and top with the grated cheese. Bake for 30 minutes or until cooked through and set.
