Hot Cross Fruit Buns

These Fruit Buns are exactly the same as hot cross buns, minus the cross.  The idea of making bread from scratch can be a little daunting, but it’s actually super easy, even more so with the help of a stand mixer and dough hook.  If you don’t have a stand mixer you will need to do the kneading by hand, but other than that the method is still exactly the same.  Place all ingredients into a mixing bowl and combine until a dough forms, the turn onto a clean floured surface and knead for around 10 minutes (a few helpers to share the load makes it a little easier).

We have added sultanas to our buns, but you could of course use any dried fruit, or even chocolate chips.  If you prefer plain buns, just omit the sultanas all together.  We have only added two tablespoons of sugar in this recipe, so if you prefer your buns a little sweeter just add an extra tablespoon.

  • 310ml water
  • 2 tablespoons oil
  • 1 teaspoon salt
  • 2 tablespoons brown sugar
  • 4 cups bread flour
  • 1 egg
  • 1 tablespoon ground cinnamon
  • 1 tablespoon mixed spice
  • 1 1/2 teaspoons bread improver (optional)
  • 2 1/2 teaspoons yeast
  • 1/2 cup sultanas


Add all of the ingredients except to sultanas to the bowl of a stand mixer, in the order shown above.
Using the dough hook, knead the mixture for approximately 5 minutes. Add the sultanas and knead again for another 3-5 minutes, or until the sultanas are mixed evenly through the dough.
Cover the bowl with cling wrap, and leave to stand in a warm area until doubled in size (around 1 hour).
Divide the dough into 12 pieces. Gently knead each piece, then place close together on a greased baking tray. Cover again with cling wrap and leave in a warm place to once again double in size.
Remove the cling wrap and bake in a preheated oven at 190c for 15 minutes, or until golden.
