Easy Potato Salad
This Easy Potato Salad is the perfect budget friendly side dish to accompany any summer meal. Not only is it frugal, but it also tastes great, it would have to be my all time favourite potato salad recipe. It’s extremely easy to make, and the best bit is since you make your own dressing, you know exactly what goes into it. If you want to make it even better, try adding finely chopped cooked bacon or chopped hard boiled eggs, or both!
To make the salad, first peel, chop and boil the potatoes on the stovetop until the potato pieces are tender. Once the potatoes are done, drain them and set the aside to cool. Meanwhile it’s time to get started on the dressing. In a small bowl, combine some mayonnaise, dijon mustard, drained and chopped capers, finely diced celery and lemon juice. Once the potato has cooled, stir through the sauce and it’s ready to serve. It’s that easy!

Easy Potato Salad
Ingredients
- 1kg potatoes, peeled and diced
- 4 tablespoons mayonnaise
- 2 teaspoons dijon mustard
- 1 tablespoon capers, drained and chopped
- 1 celery stick, finely chopped
- 1 tablespoon lemon juice
Instructions
Place the prepared potatoes in a large saucepan and cover with water. Bring to the boil on the stovetop until the potato pieces are tender. Drain and set aside to cool.
Meanwhile, make the dressing by combining the mayonnaise, dijon mustard, capers, celery and lemon juice in a small bowl.
Once the potatoes have cooled, combine with the dressing and it's ready to serve.
