I have always loved fritters; they are such an easy way to put together a snack or even meal using whatever happens to be lurking in your fridge. These Easy Corn Fritters are a real hit with kids, and they are about as easy as it gets, so easy in fact that kids even love helping to make them! These fritters are filled with frozen corn and grated carrot, but you can use any combination of vegetables you like. Anything that can be grated works well, as does frozen peas. You could even add grated cheddar cheese for cheesy fritters.
- 2 eggs
- 1/3 cup milk
- 1 cup self raising flour
- 2 cups frozen corn
- 1 large carrot, peeled and grated
- Butter or olive oil, for frying
In a large mixing bowl, whisk together the eggs and milk. Add the flour and whisk again until well combined.
Mix through the corn and grated carrot (or any other vegetables you are using).
Heat the butter or olive oil (whichever you prefer) in a frying pan over a medium heat and cook for around 3 minutes on each side, or until cooked through.
