Easy Baked Ravioli
This Easy Baked Ravioli is the perfect 20 minute meal for those times you need to feed the family and get dinner on the table, fast. Filled pre-made pasta has always been a great quick and easy dinner, something that can be quickly whipped up into a meal rather than getting takeaway on night you just have no time. But baking the ravioli takes it to a whole new level, and turns the pasta into the ultimate comfort food.
You can use any filled pasta you like, such as ravioli, tortellini or agnolotti. All fillings work well with the super simple tomato sauce. If you wanted to up the vegetable content in the sauce you could add some grated vegetables once the onion has softened, or stir through some baby spinach leaves before mixing the sauce through the ravioli.
To make this ravioli bake, start by cooking the ravioli according to the packet directions. While the pasta is cooking, begin to make the sauce by frying some garlic and onion in some olive oil until the onion softens. Next, add a jar of passata, some dried parsley and thyme and a little salt and pepper until the passata has heated through. Stir through the cream.
Once both the sauce and pasta are ready, combine the two and pour the pasta into a baking dish. Top with a combination of grated cheddar and parmesan cheese, and bake until the cheese has melted. This pasta is amazing served with some garlic bread and a leafy salad.
- 625 packet ravioli
- 690g jar tomato passata
- 1 tablespoon olive oil
- 1 onion, diced
- 1 teaspoon minced garlic
- 1 teaspoon dried parsley
- 1 teaspoon dried thyme
- salt and pepper
- 1/3 cup thickened cream
- 1/4 cup parmesan cheese, grated
- 1/2 cup cheddar cheese, grated
Cook the ravioli according to packet instructions. Drain.
Meanwhile, pour the olive oil into a medium saucepan and cook the onion and garlic over a medium heat, until onion has softened. Add the passata, parsley, thyme, salt and pepper and simmer until the passata has heated through. Stir through the cream.
Combine the sauce and cooked ravioli and transfer to a baking dish. Top with the grated cheese and bake at 180c for 20 minutes.
