Coconut Loaf Cake
This Coconut Loaf Cake is about as simple as it gets to bake, containing only 4 ingredients and costing only $1.14 to make (excluding the icing, which is optional). We have included our costings below:
1 cup dessicated coconut @$5.48kg = $0.44
1 cup milk @ $1 Litre = $0.25
1/2 cup sugar @ $1.30kg = $0.29
1 cup self raising flour @ $0.95kg = $0.16
Total cost = $1.14
We iced our cake with cream cheese icing which it totally optional, the cake is equally fantastic with or without it. To make the icing, melt 1 tablespoon cream cheese with 1 tablespoon butter in the microwave, add 1 teaspoon vanilla extract, then add in 1 cup icing sugar. Mix until combined and spread over cake. We sprinkled ours with a little extra desiccated coconut.
- 1 Cup Dessicated Coconut
- 1 Cup Milk
- 1/2 Cup Sugar
- 1 Cup Self Raising Flour
Preheat oven to 180c. Mix all ingredients in a bowl and pour into a lined loaf tin.
Bake for 40 minutes. Allow to cool in tin for 10 minutes before turning onto a baking rack to cool.
