Coconut & Apricot Balls

I remember buying apricot balls just like these from the canteen when I was in primary school, I couldn’t get enough of them.  I still love them today, they are extremely easy to make, and freeze extremely well.  Make a batch and freeze them (if they last that long), and just take out as many as you need for school and work lunches.

Coconut & Apricot Balls

Ingredients

  • 500 grams Dried Apricots
  • 395 grams Sweetened Condensed Milk
  • 2 1/2 cups Desiccated Coconut
  • Desiccated Coconut extra, for coating

Instructions

Place the dried apricots, sweetened condensed milk and dessicated coconut into food processor and mix until the apricots are finely chopped and all ingredients are combined.
Shape mixture into balls with your hands (wet your hands to make the process a little less messy). Coat balls in extra coconut. Refrigerate balls for around an hour.
Store balls in either the fridge or freezer.
