Chocolate Mint Slice
There is something about chocolate and peppermint; they just work so well together. This Chocolate Mint Slice is no exception! The chocolatey base of the slice is like a dense chocolate cake, topped with mint flavoured icing. The whole recipe is super easy to put together.
We have coloured our icing with gel food colouring, but this step is completely optional, you can leave it white if your prefer. The drizzled chocolate is also optional, but it decorated the slice nicely. For a bit for a bit of variety, try using milk or white chocolate instead of the dark chocolate in the slice.

- 125g butter
- 200g dark chocolate
- 1/2 cup sugar
- 2 eggs
- 1 1/4 cup plain flour
Preheat the oven to 180c. Line a slice tin with baking paper.
Place the butter and dark chocolate in a large microwave safe bowl and microwave in short bursts until melted, stirring each time.
Add the sugar and eggs to the chocolate mixture and stir until well combined. Add the flour and combine.
Spread the batter in the slice tin and bake for 20 minutes, or until cooked through. Allow to cool in tin.
Make the icing as per the instructions below, then spread the icing over the slice, cut into squares and serve.
To make the icing
- 1 1/2 cup icing sugar
- 1 teaspoon butter
- a few drops of peppermint essence
- 2 tablespoons milk
Add the icing sugar, butter and peppermint essence to a small saucepan, then add the milk, forming a paste. Stir the icing over a low heat until it becomes spreadable. Spread over the icing, and allow to set before slicing.
