Chocolate Chip Skillet Cookie

This Chocolate Chip Skillet Cookie is basically ordinary cookie dough baked as one giant cookie, rather than many regular sized cookies.  It’s amazing served warm as dessert with a little ice cream on the side, but equally as good served cold.  This chocolate chip recipe is one that our family has been using for years because it produces amazing cookies each and ever time, and turning the dough into a giant cookie is no exception.  It’s got a lovely slightly chewy outside, while the inside is still soft, just the way I like it!  Of course if you prefer your cookies much gooier, bake the cookie for a shorter time.  Likewise if you prefer your cookies a little firmer, just leave is in the oven a little longer.

Once the cookie is done, cut it into wedges just like a pizza (I even used a pizza cutter to slice mine).  I cut mine into 8 wedges, but of course these are very large servings, so you might like to cut yours smaller.  You can change the flavour of your cookie by using different chocolate chips,; I used dark, but milk, white or caramel all work well, or even try a combination.

Ingredients

  • 150g butter, softened
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 1 teaspoon vanilla extract
  • 1 egg
  • 1 3/4 cup plain flour
  • 1/2 cup dark chocolate chips

Instructions

Preheat the oven to 170c. Line the base of a 9 inch or larger cast iron frying pan with a round piece of baking paper.
Add the butter, both sugars and vanilla extract to the bowl of a stand mixer and beat until light and creamy. Add the egg and beat until combined.
Add the flour and mix slowly until combined. Fold the chocolate chips through the dough.
Press the mixture into the prepared frying pan using your fingers. Bake for 15-25 minutes, depending on how soft you like your cookie to be.
Allow to cool slightly before slicing and serving.
