Not only is this Chocolate Chip Chickpea Cookie Slice absolutely delicious, but it’s also kind of healthy. It contains no egg or flour, and is packed full of protein thanks to the chickpeas being the main ingredient. It gets it’s sweetness from maple syrup (the real stuff, not that fake syrup), although you could instead try honey or agave syrup if you prefer.
The slice is super simple to make. Just put put all of the ingredients, aside from the chocolate chip, into a food processor and process until you have a well combined mixture. Next, fold through the chocolate chips and pour the whole lot into a lined slice tin. I topped my slice with a few extra chocolate chips for decoration, but this is totally optional. Bake for around 40 minutes, or until the slice is cooked through. Then let sit in the tin until cool, slice and serve.

Chocolate Chip Chickpea Cookie Slice
Ingredients
- 400g can chickpeas, drained
- 1/2 cup peanut butter
- 1/2 cup maple syrup
- 1 teaspoon vanilla extract
- 1/4 teaspoon bi carb soda
- 1/4 teaspoon baking powder
- 1/2 cup dark chocolate chips
Instructions
Preheat oven to 180c. Line a slice tin with baking paper,
Add all ingredients, except for the chocolate chips, to the bowl of a food processor. Process until the mixture is well combined.. Fold through the chocolate chips.
Pour the mixture into the prepared slice tin and bake for around 40 minutes, or until cooked through.
Leave to cool in the tin before removing and slicing.
