Chocolate Caramel Slice
I have always loved caramel slice, but this Chocolate Caramel Slice takes it to a whole new level. It has a melt in your mouth shortbread base, a gooey layer of chocolate caramel, and is topped with a layer of white chocolate. Be prepared to make multiple batches of this recipe, it will be popular!

- 125g butter, softened
- 1/4 cup sugar
- 1 cup plain flour
- 395g tin sweetened condensed milk
- 90g butter
- 3/4 cup brown sugar
- 3 tablespoons cocoa powder
- 200g white chocolate
- 1 tablespoon vegetable oil
- 30g milk chocolate
Beat the butter and sugar in a stand mixer until well combined. Add the plain flour and mix slowly until a dough form. Put the dough into a lined slice tin and press onto the base evenly with your fingers or the back of a spoon. Bake in the oven at 160c for 15 minutes.
Meanwhile, put the condensed milk, butter and brown sugar in a saucepan over low heat and whisk until the mixture starts boiling. Whisk for a further minute, then add the cocoa powder and continue whisking for 4 minutes.
Pour the chocolate caramel mixture straight onto the biscuit base and spread out evenly. Leave to cool.
Melt the white chocolate and oil together, and spread evenly over the slice. Melt the milk chocolate and drizzle over the white chocolate. Slide a knife or skewer lightly across the top of the slice to swirl the two colours together.
Slice once the chocolate has set using a sharp knife and serve.
