This Chocolate Caramel Microwave Self Saucing Pudding is the ultimate quick and easy winter dessert.  It tastes great as is, but tastes even better topped with ice cream or cream.  It only takes a few minutes to prepare and 10 minutes to cook in the microwave.  Not only is it quick, but it’s one of those recipes that barely leaves any dirty dishes; the pudding is mixed and cooked all in the one dish.  You can of course leave out the caramel to make this one delicious chocolate self saucing pudding, or follow our recipes and top the batter with spoonfuls of gooey caramel sauce.  It’s completely up to you!

 

To make the pudding, first find a microwave safe bowl or serving dish, whatever you have handy.  Add some butter and milk to the dish and microwave until the butter has melted.  Next, add vanilla extract, cocoa powder, sugar and self raising flour, and stir until the mixture is smooth and well combined.  Top the batter with spoonfuls of caramel sauce (as much or as little as you like).  Sprinkle with the remaining cocoa powder and brown sugar, and gently pour over some boiling water.

 

Cooking the pudding is as easy as it gets.  Place an upside down plate in the microwave, then sit the dish on top.  Microwave for around 10 minutes, or until the top of the pudding is springy to touch.  Part of the pudding will still look gooey and undercooked, which is just the sauce created while cooking.  Serve the pudding as is, or top with a generous scoop of ice cream, or some thickened cream.

Ingredients

  • 75g butter
  • 3/4 cup milk
  • 1 teaspoon vanilla extract
  • 2 tablespoons cocoa powder
  • 3/4 cup sugar
  • 1 1/4 cups self raising flour
  • caramel sauce
  • 2 tablespoons cocoa powder
  • 1/2 cup brown sugar
  • 1 3/4 cups boiling water

Instructions

In a microwave safe bowl or serving dish, melt the butter and milk together using the microwave.
Add the vanilla, cocoa powder, sugar and self raising flour, and stir until smooth and well combined.
Drop spoonfuls of caramel sauce over the pudding mixture. Sprinkle with the cocoa powder and brown sugar and the gently pour over the boiling water.
Place bowl on an upside down plate in the microwave and cook for around 10 minutes, or until the cake feels springy to touch.
