Chicken and Broccoli Quinoa Casserole
This Chicken and Broccoli Quinoa Casserole is the perfect dinner that is quick, easy, healthy and budget friendly, all in one delicious dish. It’s packed full of broccoli, but the chicken and bacon flavours will convince you family it’s the best broccoli they have ever tasted. This recipe uses a decent amount of quinoa, so to keep it a budget friendly meal I recommend shopping around and buying your quinoa in bulk if possible. I buy mine in 1kg bags from Costco for around $9, but let me know if you have found it even cheaper! Because it contains a large amount of broccoli it’s also best to make when broccoli is in season and at it’s cheapest.
To begin making this dish, you will need to make a basic sauce. Start by melting some flour in a saucepan, then add flour and stir until a paste forms. Gradually add the chicken stock and milk, stirring continuously until the sauce begins to thicken. Take the saucepan off the heat and add dried oregano and thyme, as well as the quinoa and some cooked bacon.
Get a large baking dish and add to it your prepared broccoli as well as the sauce, stirring to combine the two. Lay the sliced chicken over the broccoli and sauce in a single layer. Cover with foil and bake for 30 minutes. Remove the foil, give the mixture a stir and cook for a further 10 minutes or until the quinoa is cooked through. Top with some parmesan and cheddar cheese and bake for 5 more minutes to melt the cheese. Serve while hot!
- 3 tablespoons butter
- 3 tablespoons plain flour
- 3 cups chicken stock
- 1 cup milk
- 100g bacon, chopped and cooked
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 cup quinoa, rinsed
- 3 cups broccoli florets
- 500g chicken breast, thinly sliced
- 1/4 cup parmesan cheese, grated
- 1/4 cup cheddar cheese, grated
Add the butter to a medium sized saucepan and melt over low heat. Add the flour and stir until a paste forms. Gradually add the chicken stock and milk, stirring well between each addition. Continue stirring until the sauce just begins to thicken. Take off the heat and stir through the oregano, thyme, cooked bacon and quinoa.
Add the broccoli to a large baking dish and pour the sauce mixture over the top, stirring gently to combine with the broccoli. Lay the sliced chicken over the top in a single layer. Top with foil and bake at 180c for 30 minutes.
Remove the foil, give the casserole a stir and return to the oven for a further 10 minutes, or until the quinoa is cooked. Top with the cheese and bake for a further 5 minutes or until the cheese has melted. Serve.
