This Blueberry Muffin Slice is basically just like a giant blueberry muffin. Rather than cooking individual muffins in a muffin tin, the mixture is cooked in a loaf tin and then sliced like a cake. While it might look like a loaf cake, it has the same soft texture and taste of a muffin.
As with muffins, you can use this recipe as the base for all sorts of muffin slice flavours. Try substituting the blueberries for raspberries or chocolate chips, or you could even omit the berries all together and just make a basic muffin slice.
