Blueberry Muffin Slice
This Blueberry Muffin Slice is basically just like a giant blueberry muffin. Rather than cooking individual muffins in a muffin tin, the mixture is cooked in a loaf tin and then sliced like a cake. While it might look like a loaf cake, it has the same soft texture and taste of a muffin.
As with muffins, you can use this recipe as the base for all sorts of muffin slice flavours. Try substituting the blueberries for raspberries or chocolate chips, or you could even omit the berries all together and just make a basic muffin slice

Blueberry Muffin Slice
Ingredients
- 1 1/2 cups self raising flour
- 1/2 cup sugar
- 1/2 cup rolled oats
- 1 cup blueberries
- 2/3 cup milk
- 1 egg
- 100g butter, melted
Instructions
Preheat the oven to 180c. Line a loaf tin with baking paper.
Add the self raising flour, sugar and rolled oats to a large bowl and mix well. Stir through half of the blueberries.
Combine the milk, egg and melted butter, the pour milk mixture into the dry ingredients and mix until just combined; the mixture will still look a little lumpy.
Pour the mixture into the loaf tin and scatter over the remaining blueberries.
Bake for 50 minutes or until cooked through. Allow to cool in tin before removing.
