BBQ Chicken Pizza

This BBQ Chicken Pizza is so packed full of flavour, it’s sure to be a hit with everyone.  To make it a quick and easy dinner, we used a purchased BBQ chicken, and used our No Rise Pizza Dough recipe for the base.  Any BBQ chicken will do, or you could even use leftover roast chicken or chicken breast.  We used a Costco BBQ chicken which are fantastic value at only $6.99 for a minimum 1.4kg hot cooked chicken.

Pizza is one of those dinners where you can use up leftovers in your fridge; you don’t have to strictly stick to this recipe, just use whatever you have on hand.

  • 2 pizza bases
  • 4 tablespoons bbq sauce
  • 250g cooked bbq chicken
  • 100g button mushrooms, sliced
  • 2 small capsicums, sliced
  • 1 cup cheese (cheddar, mozzarella or both), grated


Preheat oven to 200c. Place you pizza bases on 2 baking trays.
Dividing all ingredients between the 2 pizzas, spread the sauce over the bases, followed by all other ingredients.
Drizzle a little extra bbq sauce in a swirl pattern over each pizza (optional), and bake for around 15 minutes, or until pizzas are golden.
