We love pikelets, but if you aren’t familiar with them, pikelets are basically a bit like a pancake that you eat as a snack, rather than for breakfast.  They freeze extremely well, so they are perfect for making in bulk and freezing.  Then all you need to do is take as many out as you need each morning, and they will be well and truly defrosted and ready to eat by lunch time.  They are great on their own, but you can also top them with jam and cream, Nutella, or even fresh or frozen berries or honey.

 

Not only are these pikelets delicious, but they are also super easy to make.  To prepare the batter, add self raising flour and baking powder to a large bowl and set aside.  In another bowl, mash a ripe banana, then add honey, eggs and milk.  Stir the wet ingredients until well combined, the add to the dry ingredients and stir once again until the batter is smooth.

 

Once the batter is ready, heat a frying pan with a little butter or spray oil, and scoop in the pikelet mixture.  Cook on the first side until golden, then flip and cook on the remaining side until golden and cooked through.  They are perfect eaten straight away or once they have cooled, both ways are equally as good.

Banana Honey Pikelets

Ingredients

  • 1 cup self raising flour
  • 1/2 teaspoon baking powder
  • 1 banana
  • 2 tablespoons honey
  • 1 egg
  • 3/4 cup milk

Instructions

Add the flour and baking powder to a large mixing bowl and combine. Set aside.
In another bowl, mash the banana then add the honey, egg and milk. Whisk until all ingredients are well combined, then add to the flour and baking powder and mix once again.
Heat a large frying pan with a little spray oil or butter, and cook the pikelets for a few minutes on the first side, until golden brown, then turn and cook the other side. Serve warm or cold.
