This Avocado and Bacon Pasta Salad is so good, it’s perfect as a side dish or even a main course. It’s great for those hot summer nights when you want something cold and easy for dinner, and makes a great BBQ side dish.
Start with packet of small pasta, I used macaroni. Use a whole pack of pasta if you are feeding a crowd or half a pack if you don’t want quite so much, you will just end up with a higher dressing to pasta ratio! Next, fry some bacon until it starts to get some colour and set it aside on a paper towel lined plate. Make the dressing by combining some mayonnaise, lemon juice, thyme and olive oil, and peel, stone and dice your avocado so it’s all ready to go. Then simply combine the pasta, bacon and avocado in a large bowl, drizzle over the prepared dressing and stir gently until mixed through.
- 500g small pasta
- 5 slices bacon, diced
- 2 avocados, diced
- 3/4 cup mayonnaise
- 1/4 cup lemon juice
- 1/2 teaspoon dried thyme
- salt and pepper
- 1/3 cup olive oil
Cook the pasta according to packet directions. Drain once cooked and set aside to cool.
Cook the bacon over a medium heat until the bacon is cooked through and starts to brown. Transfer to a paper towel lined plate.
To make the dressing, add the mayonnaise, lemon juice and thyme to a bowl.. Whisk until combined and season with salt and pepper. While still whisking, slowly pour in the olive oil. Whisk until well incorporated.
In a large serving bowl, add the pasta, bacon, avocado and dressing and carefully stir until combined.
Keep in the fridge until ready to serve.
