Ice cream does not have to be complicated, and can be made without an ice cream machine. It may not be exactly the same as store bought ice cream, but it’s the perfect substitute when you are short on time. This 2 Ingredient Apricot Ice Cream is something you can whip up at any time by keeping the ingredients in the cupboard; all you need is a can of apricot halves, and a can of sweetened condensed milk.
- 820g can apricot halves, drained
- 395g can sweetened condensed milk
Combine the drained apricots and condensed milk in a bowl, then place in the freezer and leave overnight.
Chop up the frozen apricots and condensed milk, the place in a food processor and mix until the mixture is smooth.
Eat straight away, or place back in the freezer to further set.
