Quick and easy mid week meal plan
If you are anything like me, you probably find mid-week meals so much more difficult than they should be. After a long, busy day, the last thing you feel like doing is coming up with and cooking a meal that your family will love, which is even harder if you have fussy kids.
So many of us revert to making the same meals week after week because it means we know they are quick and easy, but it can get pretty boring after a while…
To make the next week’s weeknight meals a little easier, I have put together this 5-night mid-week meal plan. All you need to do is head to the shops and follow these 5 quick and easy recipes. Each meal is packed full of flavour thanks to the Fountain range of sauces.
Monday – Chicken Satay Burgers
Burgers are always a family favourite, and most kids absolutely love them, especially when they get to assemble their own. These Chicken Satay Burgers are a twist on typical hamburgers, and have a great flavour hit from the Fountain Satay Sauce. We served the burgers with beer battered chips and Fountain Spicy Red for dipping, but you could also make your own oven baked chips or wedges. Tuesday – Pork Stir Fry with Plum Sauce
Stir-fry is one of those classic, quick and easy weeknight meals. I used pork mince rather than strips of pork for something different, and chicken would work just as well. I added a range of vegetables I already had in the vegetable crisper, and then used Fountain Plum Sauce to finish off this delicious stir-fry that the entire family devoured. Wednesday – Cheesy Meatballs
These are no boring meatballs, even though they take no time at all to make. They are loaded with grated cheese and a little Fountain Steak Sauce to give a flavour punch. The meatballs are then coated in a very simple tomato sauce, and served over pasta.
As with anything made from mince, these meatballs are also a great way to boost your kids’ vegetable intake without them even noticing. Just grate some carrot, sweet potato or zucchini into the meat mixture before you shape it into meatballs. Get Wednesday’s recipe here.
Thursday – Baked Honey Soy Chicken
There is something so easy about coating meat in marinade and letting the oven do all of the hard work for you, which is exactly what this Baked Honey Soy Chicken is about. It is absolutely packed full with flavour, and you can have it in the oven in two minutes flat by using Fountain Soy and Honey Sauce.
What you serve the chicken with is up to you, but my favourite way is with a little rice and plenty of steamed vegetables. Get Thursday’s recipe here.
Friday – Lamb Wraps with Mint Yoghurt Sauce
I love to make Friday nights ‘fakeaway’ night, where we have a meal inspired by takeaway. We feel like we are getting our takeaway fix while saving money at the same time, plus it’s much healthier and actually tastes way better. The lamb wraps taste a bit like a yiros, but with a mint twist.
I used Fountain Mint sauce in the lamb marinade, and Fountain Thick Mint in the yoghurt sauce. It’s safe to say these are now a regular meal in our house, the entire family loved them. Get Friday’s recipe here.
